Holiday Glazed Carrots 

I've got an obsession with turkey, but the thing that I look forward to most of all during the Thanksgiving, Christmas, Boxing Day season is the side items! In particular, these sweet glazed carrots. We tend to only have them around the holiday season and maybe once at Easter. For us, these glazed carrots a real festive treat! With just five ingredients, they're easy to make and you can leave them to bubble away on the stove while you get on with the rest of the meal. Winning.

These carrots make my toddler ask for seconds. My toddler who despises carrots cannot get enough of these sweet nuggets of nutrition. And do you know what? I'll happily give him seconds of these because he'll be filling up on vegetables, not cookies and crisps.

Ingredients:

For the glazed carrots
1 tbsp brown sugar
1 tbsp lemon juice
2 cups Chantenay or other sweet carrots
2 tbsp butter
2 tbsp honey
salt

Instructions:

Holiday Glazed Carrots
  1. Boil the carrots in salted water for about 5 minutes or until they are just beginning to get fork tender.
  2. Drain and put the carrots back in the saucepan along with the butter, brown sugar, honey and lemon juice.
  3. Bring to the boil, stirring.
  4. Leave the carrots to cook until the liquid has reduced to a sticky, syrupy glaze that coats them. You can stir every now and then to check progress, but it's not necessary. This should take about 5 minutes.
